I’m no chef, but I do love to cook. I’m always looking for new recipes to try out (usually on Pinterest) that are quick and simple to make because I’m always in a rush. I figure if I combine a few good quality ingredients, I can whip up something that’s going to taste really good without having to do a ton of prep work.
I was really excited to work with Ancient Foods because I love mediterranean food, and put olive oil on pretty much everything. I also really like that they source their products directly from farmers in tiny Greek mountain villages. I have been to Greece and let me tell you the food is amazing! They sent me their Wild Forest and Thyme Honey and their Keros Extra Virgin Organic Olive Oil to try. I immediately started searching for the perfect recipe to match these ingredients and found this thyme honey and dijon glazed chicken drumsticks recipe. The recipe is paleo if you’re into that sort of thing.



I tasted the honey on its own and it has a distinctive thyme flavor without being overpowering. The thyme flavor comes from the bees foraging the wild thyme that covers the mountainside where the honey is sourced. Isn’t that crazy?? I knew this honey would be perfect for a savory but sweet dish. The recipe calls for dried thyme, but I decided to leave it out and let the honey bring all the flavor. It took me less than 10 minutes to prep the chicken and then 45 to cook. Not bad at all!


While the chicken was in the oven, I made some green beans and tossed them in a bit of the olive oil. The food was absolutely delicious! Just as I suspected, the honey was a great match with the chicken. The olive oil was also amazing, both as part of the recipe and drizzled over the green beans. It is described as having hints of fresh herbs and a round, buttery, peppery finish. I’m by no means an expert on gourmet olive oils, but I can certainly taste the difference between these products and your standard grocery store fare.
